Chicken in Herb Crusts:

Serves 4

4 boned and skinned chicken breast
15ml/1 tbsp Dijon mustard
30ml/2 tbsp chopped fresh parsley
50g/1 cup fresh breadcrumbs
15ml/1 tbsp dried mixed herbs
25g/2 tbsp butter, melted
salt and freshly ground black pepper

1. Preheat the oven to 180°C/350°F/Gas 4. Lay the chicken in a greased ovenproof dish and spread with the mustard. Season with salt and pepper.
2. In a large bowl, mix the fresh parsley, breadcrumbs and the dried mixed herbs together thoroughly.
3. Press on the chicken to coat. Spoon over the melted butter. Bake uncovered for 20 minutes or until tender and crisp.


Chicken Fillets with Mango Chutney glaze:

Serves 6

• 6 chicken breast fillets or 12 boneless skinless thighs
• 1 tbsp apricot jam
• 1 tbsp mango chutney
• ½ cup mayonnaise
• 1 tsp Worcestershire sauce
• 2 tsp grainy mustard
• 1 tbsp lemon juice

Place chicken in dish, add combined jam, chutney, mayonnaise, and Worcestershire sauce, mustard and lemon juice. Marinate several hours or overnight refrigerated. Barbecue chicken until cooked through, basting frequently with glaze.
